World’s Best (and Easiest) Pancakes

This is my go-to pancake recipe. It originated as a passed down recipe from my grandma, but over the years I have tweaked different additions to her original ingredient list, and this recipe I share with you today is the results of years of perfecting! And these pancakes are just that…perfect.
The origins of these perfect pancakes:
This is also the only baking recipe I have ever memorized. Because of that, I make these pancakes a lot.
They are so quick to whip up on a weekend morning! I swear I can get these babies made from scratch, cooked, and on the table in about 10 minutes flat.
My brother also has this recipe memorized and he fondly calls it the “2-2-2-2 pancake recipe”, named so because the original ingredients were just that simple: 2 cups of flour, 2 cups of milk, 2 eggs, and 2 teaspoons of leavening agents (1 baking powder, and 1 baking soda)!
Although that original recipe is also great and beautiful in it’s simplicity, I think my version has created a pancake that has just that much more flavour and the perfect texture!
This recipe originates from my paternal grandmother, whom we called Mer, and her name for the original version of this recipe was Shrove Tuesday pancakes - named because this recipe was made en masse in the catholic church she attended on “fat tuesday” or shrove tuesday.

I love pancakes for so many reasons…
I love how easily you can dress them up with seasonal fruit, I love how they can make a quick and easy weeknight dinner that somehow feels really fun for the kids even though they are just pancakes.
And I also love how people seem to really appreciate a big ol’ batch of homemade pancakes when you want to host an affordable brunch for a crowd!
My favourite way to cook pancakes:
My favourite way to cook up these pancakes as evenly and quickly as I can when I’ve got hungry mouths to feed is to use my stove top griddle.
I’ve currently got a non stick double sided grilled which I bought from costco a year or so ago, but I have been dreaming of investing in a sturdy, durable cast iron griddle, like this one which will last for quite literally my lifetime, and not potentially chip off unhealthy non-stick bits over time.
We switched our household over to cast iron only pans in the last few years, and it’s about time I did the same for my very well used griddle, too!

Instructions
- Whisk together all wet ingredients in a small bowl first, to allow the milk to slightly curdle while you mix the dry ingredients separately (essentially creating a buttermilk substitute).
- Next, combine the flour, sugar, baking soda, baking powder and salt in a large bowl and mix until well combined.
- Create a well in the middle of your dry ingredients and pour in your wet ingredients.
- Mix slowly until combined, making sure not to over-mix the batter.
Notes
You can substitute buttermilk for the combination of milk, yogurt and vinegar.
You can also omit the sugar if you wish, or if you want to avoid any potential burning of your pancakes on a extra hot griddle!
